As health consciousness rises, people would like to know if it is possible to follow a healthy diet and still enjoy baked products.

Mlýn Perner (also known as Mill Perner) will help answer this question at their session ‘Flour Power: Meet the family run business changing the game through technology' on Tuesday 25th April, 11:30am - 12:15pm on the Education Hub, live from the UK Food & Drink Shows.

We catch up with Daniel Koval from Mlýn Perner ahead of the Shows, to find out more about Pernerka and their insightful session:

Who are you? And what do you do?

My name is Daniel Koval and I am the Head of Research and Development at Mlýn Perner.

 Tell us a more about Mlýn Perner. 

Mlýn Perner is the largest and most modern mill in the Czech Republic, producing 490 tons of Pernerka flour every day.

The mill in Svijany was founded in 1420 and throughout its history belonged to a few noble families.

After a period of expansion, the mill, which was owned by the Perner family during the First Republic of Czechoslovakia; was nationalised in 1948 and only in 1992 did the mill return to Perners.

After two decades of development, the Perner family mill is among the largest domestic flour producers in the Czech Republic. The mill is equipped with the most advanced milling technology which includes a unique technology for milling wholemeal flour to a very smooth, fine granulation. The mill focuses on delivering products of top quality and also on working with local grain producers.

What sets you apart?

Using cutting-edge technology, we produce wholemeal flour from different cereals and pseudo-cereals with extra fine granulation, high nutritional value, and therefore unique baking properties.

Pernerka flour is easy to work with and is suitable for baking products with high content of fibre, vitamins, and bioactive compounds. Not only that, but it also tastes great!

What can the audience expect from attending your session at the UK Food & Drink Shows?

Visitors should come along to the session to learn more about our production process, nutritional benefits of Pernerka flour and for a chance to try it for themselves, as Mlýn Perner will bring some baked goods to sample.

What is the most rewarding part of your current job?

Daniel Koval : The most rewarding aspect of my job is helping our customers to understand how eating nutritionally valuable food affects their health and how well-balanced diet improves their physical and mental wellbeing. I particularly love working with our marketing team as they help the company to convey this important message to our customers.

Mlýn Perner is a family company with a long tradition. For me, running our mill is more than just a job! It is a passion and that’s how I approach every task that needs to be done. I love providing our customers with the best products and service as is humanly possible. At the end of the day, a happy customer is the best reward I can get!

What have been your career highlights so far?

Daniel Koval: During my first year in the mill, I worked with one of the biggest retailers in the Czech Republic on the development of wholemeal rye sourdough bread that has become a staple product in their baking products portfolio. The bread is still being sold to this day. I also appeared in a couple of TV morning/breakfast shows where I was invited to talk about flour from a specialist point of view. I find this to be an incredible achievement considering my age. And lastly but not least, being trusted to represent the Mlýn Perner at the Food and Drink Expo is yet another big achievement I am very proud of!

Daniel Perner: We are the largest mill in the Czech Republic and we have been selling our products to big international companies such as Mondelēz International or La Lorraine Bakery group for a long time. Our long-term cooperation has been great! Following all the rules can be challenging at times, but we’ve proved ourselves to be worthy of their trust. This is one of the biggest achievements for me and also for the mill. I also do have to mention the research here and the establishment of our unique milling technology that we use to produce our range of high nutrition wholemeal fine flour. Use of the cutting-edge technology and differentiating ourselves from the rest, has definitely opened the doors to the retail sector.

What is your motto in life?

Daniel Koval: I guess it would be Eat better, live better! I love eating delicious and healthy food which makes me feel happy. The Italian cuisine deserves a special mention, it is simply great!

Daniel Perner: ‘Healthy body, healthy mind!’ I try my best to apply this in my everyday life.
